Manouri Cheese Skewers

A great vegetarian idea for your BBQ which works well with all sorts of vegetables

Ingredients

  • 200 gr Odysea Manouri Cheese PDO
  • 2 medium courgettes, thinly sliced
  • 1 pepper cut in cubes
  • 1 lemon, for its juice
  • a pinch of salt
  • 12 cherry tomatoes
  • skewers

Instructions

  1. Thinly slice the courgette and marinate in lemon juice with a bit of salt.
  2. Cut the vegetables in squares, approximately ½ inch wide, the same as the cubes of manouri.
  3. Thread in the skewers.
  4. Sear over the BBQ or on a hot griddle pan for 3-4 minutes each side.
