Saffron Harvest in Kozani, Greece

October to November is the Crocus harvest season in Kozani, Greece. The flowers are harvested by hand and each individual stigma is extracted then left to dry. It takes more than 85,000 flowers to produce just one kilo of Saffron. Fortunately just a little of this precious spice is all that's needed to impart it's unique aroma.
