Stewed Artichokes and Peas Recipe

Ingredients
- 1 x 450g packet frozen artichokes (or the equivalent amount of fresh)
- 1lb frozen peas
- 4/5 spring onions, finely sliced
- 2 tbsp fresh dill, chopped
- freshly squeezed juice of 1 lemon
- 4 tbsp olive oil
- 1 tsp salt
- 1 tsp sugar
- 1 pint water
Method
- Fry the spring onions in olive oil for 5 minutes in a large saucepan.
- Add peas and lemon juice, place the artichokes on top and cover with water, sugar and salt.
- Cover and simmer over a low heat for 30 minutes, or until all the water has been absorbed and only the oil is left on top.
- Sprinkle with dill and serve hot or at room temperature.
