Green Olive & Tomato Salad Recipe
Ingredients
- 4 cups tomatoes, seeded and chopped
- 2 cups Odysea Green Cracked Olives
- 1 clove crushed garlic
- Half cup fresh basil, chopped
- 1 cup fresh parsley, chopped
- Salt & freshly ground black pepper to tatse
- 1 cup Odysea Extra Virgin Olive Oil
- Third of a cup Odysea Aged Corinthian Vinegar
Method
- Make the dressing by putting oil, vinegar, garlic, salt and pepper into a jar.
- With lid on, shake well and keep to one side.
- Combine tomatoes, olives, basil and parsley, in a bowl and pour desired amount of dressing over, mix well and serve. Any remaining dressing can be stored in the refrigerator.
